Coffee Cherry

From Flower
to Fruit.

After the petals fall, a small green cherry emerges. Over months of soaking in the mountain sun and rain, these cherries ripen into a deep, glossy red fruit, sweet and rich in antioxidants.

Coffee Harvesting

Selective
Handpicking.

Harvesting is a meticulous craft. Only the ripest, most vibrant red cherries are gently handpicked by skilled farmers. Every cherry holds two values: the cherished seed inside, and the nutrient-dense fruit outside.

Pulping & Drying

The fruit is softly pulped to extract the coveted seed. It is washed in mountain spring water and spread across drying patios under the warm Indian sun until reaching perfect parchment equilibrium.

Sun-Dried Cascara

Instead of discarding the cherry skins, we upcycle them. The peels are meticulously sun-dried, transforming into "Cascara" — preserving all the natural sweetness, fruity flavors, and botanical complexity.

Parchment
Removal.

The dried beans rest in their protective parchment layer to allow flavors to stabilize. Finally, hulling removes the parchment, unveiling the pristine, pale "green coffee" beans, ready for the roaster.

Roasted Coffee Beans

The Art of
Roasting.

Through carefully controlled heat, the green beans undergo a miraculous transformation. Sugars caramelize, oils are released, and the signature rich, deep chocolatey aromas of ELĀRA coffee are born.

Coffee Powder

Fresh
Grinding.

The final step before brewing. Whether finely milled for our signature Coffee Powder or freshly ground at home from whole beans, the grind dictates the extraction and unlocks the full depth of flavor.

The Return of
Cascara.

The dried cherry peel, often overlooked, becomes a refreshing botanical infusion. By utilizing both the bean and the fruit, we honor the entire plant — reducing waste and expanding the horizon of coffee.
